Food Service Waste Management
A kitchen produces more than used cooking oil. Plate scrap, prep waste, and spent fryer oil each leave by a different door: a renderer, a compost site, or a fuel plant.
Grease.org focuses on the grease and oil stream. Used cooking oil is collected in a sealed caddy. Drain grease stays in a serviced trap. Both can become a commodity instead of a sewer backup or a trash bill.
Three streams, three containers. Fryer oil goes in a sealed caddy. Drain grease stays in a trap that is pumped. Food scraps, where a city collects them, go in the organics bin. Oil does not belong in the scrap cart, and trap waste does not belong in the oil caddy.
The pages in this section are the kitchen side of that split. Grease.org does not certify a zero-waste kitchen and does not file a city's waste report.
