Regulatory Reporting and Compliance

Haulers and restaurants are sometimes asked to show how much oil they collected and where it went. The questions are usually about yellow grease from fryers, brown grease from traps, and the difference between the two.

Grease.org does not file those reports. The articles here explain the materials a report is about, so a kitchen can name them correctly when a hauler or an inspector asks.

Naming the material is the useful part of a report. Yellow grease is fryer oil. Brown grease is trap waste. Used cooking oil, waste vegetable oil, and yellow grease are names for the fryer stream. Grease.org explains those names. We do not file the hauler's report.
