Organic Waste Divert Programs
A divert program asks the kitchen to keep food waste and grease out of the trash and out of the sewer. The practical split is simple. Solid food scraps go in the organics bin. Used oil goes in a sealed collection caddy. Grease from the drains stays in a trap that is pumped on a schedule.
Indoor and outdoor containment tanks give the oil a place to wait between pickups so it never sits in an open bucket.
Between pickups, the oil needs a closed place to wait. Indoor tanks and outdoor containers do that job. An open bucket in the alley is how oil reaches the storm drain, and how a divert program fails the inspection it was meant to pass.
