Automated Grease Removal Devices

An automatic grease removal device skims the floating grease layer on a timer. The kitchen does not wait for a pump truck for every gallon that collects in the box.

The device does not replace service. It still has to be emptied, cleaned, and checked. It sits beside a traditional interceptor, not instead of a maintenance plan.

A timer moves floating grease into a small collector. Someone still has to empty that collector, and the box underneath still needs a wash-out. If the outlet is packed with grease, the skim does not keep fats out of the sewer. The device sits beside a maintenance plan. It does not replace one.

What the timer does not do

An automated grease removal device skims floating fat into a collector on a timer or a sensor. The sales claim is that the kitchen empties a small tray instead of calling a pumper. The tray is real. The claim is incomplete. Food solids still settle in the box. A film still grows on the walls. The inlet and the outlet still have to be clear. Health and sewer inspectors in many cities still expect the box to be opened and cleaned on an interval, and they still expect a record. The timer does not write that record.

The skimmed fat is not automatically yellow grease. It can be a wet, food-contaminated scrape from a sink line. Some kitchens collect it for a renderer. Some throw it out. It should not be poured back into a used-cooking-oil caddy that a biofuel buyer is paying for as a vegetable-oil feedstock. Mixing a skimmings tray into fryer oil is how a clean load fails a moisture and impurities test. Keep the tray, the caddy, and the interceptor as three containers if you have all three.

Mechanical skimmers fail in ordinary ways. The heater that keeps the fat liquid quits. The wiper wears. Staff turn the unit off because it clicks during service. A switched-off automatic box is then just a small interceptor with no maintenance. GREASE.ORG's cleaning visit still applies: pump what the skimmer left, scrape the interior, wash it, and look at both pipes. The visit is often quicker than a neglected gravity tank. It is not optional.

Choose an automatic device because the kitchen wants a daily skim and will actually empty the tray. Do not choose it to avoid a grease hauler forever. The code, the solids, and the outlet are still there when the timer is running perfectly.
